Collards with Kimchi

What You Need

  • 1 tablespoon coconut oil
  • 4 ounces yellow onion, chopped
  • 16 ounces Nature’s Greens® Collards
  • 3 cups low-sodium vegetable broth
  • 1 1/2 teaspoons apple cider vinegar
  • 14 ounces mild kimchi, drained and chopped

What You Do

Pour oil in a large pot and heat to high. Reduce heat then add onion and sauté 5 – 7 minutes or until onions begin to brown.  Stir in collards and broth. Cover and cook over medium heat, stirring occasionally for 20 minutes. Stir in vinegar and kimchi. Serve at once.
