What You Need

  • 1 cup gluten-free flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 eggs
  • 1/4 cup canola oil
  • 1/2 teaspoon vanilla
  • 1 cup mango, chopped
  • 1/4 cup dates, chopped
  • 1/4 cup macadamia nuts, chopped
  • 2 cups Nature’s Greens® Kale, chopped

What You Do

Heat oven to 350 F. Sift flour, sugar, baking soda, salt, and cinnamon together. Whisk eggs, canola oil, and vanilla together. Stir wet ingredients into dry ingredients until just moistened. Stir in mango, dates, nuts, and kale. Pour into a prepared 8” x 4” x 2” loaf pan. Bake for 50 to 55 minutes or until a toothpick inserted in the middle comes out clean. Cool 10 minutes before serving.
