Open Faced Sweet & Savory Chicken Sandwiches

What You Need

  • 4 cups Nature’s Greens® Mustard
  • 1/2 cup low sodium vegetable broth
  • 1 tablespoon coconut oil
  • 1 small Vidalia onion, thinly sliced
  • 4 slices whole grain bread, toasted
  • 1/4 cup prepared chutney
  • 4 thin slices precooked chicken breast
  • 1 avocado, sliced
  • Sea salt to taste
  • Pepper to taste

What You Do

Over medium heat, cook mustard in broth for 20 minutes. Drain and set aside. While greens are cooking, heat oil in a medium size skillet over high heat for 1 minute. Reduce heat to medium, add in onion.  Cook onion for 5 minutes, stirring often, until transparent.  Spread chutney on bread.  Top with chicken, avocado, collards and onions. Sprinkle with salt and pepper. Serve immediately.
