  • 4 cups Nature’s Greens Kale
  • 1/2 cup pomegranate seeds
  • Organic Mild Vinegar Love Beets, 4 quartered
  • 3 figs, quartered
  • 1 oz goat cheese, crumbled
  • 1/3 cup walnuts, chopped
  • 1 tablespoon olive oil
  • Balsamic vinaigrette

 

Balsamic Vinaigrette

  • 1 Tablespoon dijon
  • 1 Tablespoon maple syrup
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • Combine all ingredients in a jar and shake until emulsified.

 

Finely chop kale greens and massage in a large bowl with olive oil. Top with pomegranate seeds, beets, figs, goat cheese, and walnuts. Drizzle with balsamic vinaigrette. Feel free to add more or less of each topping according to your personal preference.
