Crust

  • 1 cup quick-cooking oats
  • 1/2 cup light brown sugar, packed
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil, melted

Filling

  • 1/2 cup coconut oil, melted
  • 2-ounces semisweet chocolate, chopped
  • 1 cup sugar
  • 2 large eggs 
  • 1/4 cup milk
  • 2 teaspoons vanilla
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Nature's Greens® Kale

Frosting

  • 3 tablespoons coconut oil, melted
  • 1-ounce unsweetened chocolate
  • 1 cup confectioners sugar
  • 1 tablespoon milk
  • 3/4 vanilla extract
  • 1 cup Nature’s Greens Kale, finely chopped
  • Strawberries, washed and stemmed
  1. Preheat the oven to 350° F. In a medium bowl, mix together oats, brown sugar, flour, baking soda, salt and melted coconut oil. Press into a 9-inch prepared baking pan and bake for 10 minutes.

  2. While the crust bakes, start the filling. In a saucepan over low, heat the coconut oil and chocolate stirring until chocolate is melted.  Remove from heat; stir in sugar, egg, milk, and vanilla then set aside.  In a separate bowl, combine flour, baking soda and salt; slowly stir into chocolate mixture until smooth. Stir kale into the filling.

  3. Remove crust from oven, and pour in filling. Bake at 350° F and bake for 35-40 minutes or until the top springs back when lightly touched. Cool completely on a wire rack.

  4. For the frosting, heat coconut oil and chocolate in a saucepan over low, stirring until the chocolate is melted. Remove from heat and stir in confectioners sugar, milk, and vanilla extract until smooth. Frost the cooled bars. Once the frosting has slightly hardened, cut into squares. Just before serving, sprinkle powdered sugar over each bar and top with strawberries.
