Ingredients
Directions

  • 4 tablespoons unsalted butter, divided
  • 16 ounces shelf-stable potato gnocchi
  • Salt and freshly ground black pepper
  • 1 lb large frozen shrimp, thawed, shelled and de-veined
  • 2 teaspoons seafood seasoning
  • 2 cloves garlic, thinly sliced
  • Juice of half a lemon
  • 6 ounces Nature’s Greens® Greens Trio
  • Fresh basil, chopped
  1. Add 2 tablespoons butter to a non-stick skillet set over medium heat. When melted, add gnocchi in a single layer and cover pan with a lid. Cook about 5 minutes undisturbed. Uncover and continue to cook 10 minutes more, stirring occasionally, until evenly golden brown. Remove gnocchi from the pan.
  2. Pat the shrimp dry with paper towels. Toss shrimp, a little salt, pepper and seafood seasoning in a large bowl.
  3. Add the remaining 2 tablespoons butter to the pan. Stir in garlic and cook 1 minute. Add shrimp to the pan in a single layer and cook 1-2 minutes on each side, until no longer pink. Remove shrimp and garlic from the pan.
  4. Finally, add lemon juice and greens, stirring to combine. Cover and allow greens to steam about 1 minute. Uncover and continue to cook another couple of minutes until most of the liquid has evaporated.
  5. Return gnocchi and shrimp to the pan. Toss everything together with basil and more black pepper to serve.
