• 1 teaspoon coconut oil
  • 6 slices bacon, cut into squares
  • 1/2 medium white onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, quartered
  • 4 handfuls Nature's Greens® Kale
  • Sprinkle of sea salt & black pepper
  1. In a large skillet, melt the coconut oil over medium heat. Using kitchen scissors to cut the strips of bacon into squares over the pan and cook until slightly crisp.
  2. Add the onion and garlic and cook until soft. Add the mushrooms and stir until shiny, about two minutes.
  3. Add the kale, discarding fibrous stems as you go. Cook until the kale turns dark green and softens. Sprinkle with salt and pepper.
