- 1 teaspoon coconut oil
- 6 slices bacon, cut into squares
- 1/2 medium white onion, diced
- 2 cloves garlic, minced
- 1 cup mushrooms, quartered
- 4 handfuls WP Rawl Farms® Kale
- Sprinkle of sea salt & black pepper
- In a large skillet, melt the coconut oil over medium heat. Using kitchen scissors to cut the strips of bacon into squares over the pan and cook until slightly crisp.
- Add the onion and garlic and cook until soft. Add the mushrooms and stir until shiny, about two minutes.
- Add the kale, discarding fibrous stems as you go. Cook until the kale turns dark green and softens. Sprinkle with salt and pepper.
