  • 2 tablespoons extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ground black pepper
  • 1 cup Nature’s Greens® Kale 
  • 1/2 cup red onion, minced
  • 1/2 cup cucumber, chopped
  • 1/2 cup red bell pepper, minced
  • 16 grape tomatoes, quartered
  • 1 cup cooked cannellini beans
  • 6 fresh basil leaves, chopped

 

In a medium bowl, whisk together olive oil, vinegar, garlic, Italian seasoning, salt, and pepper. Add kale, onion, cucumber, bell pepper, and tomatoes, and stir to coat the veggies thoroughly with the dressing. Gently fold in beans and basil.
