- 3 red apples
- 2 cups 100% pure orange juice
- 1 15.8 ounce can of chick peas
- 1/4 cup Versatile Veggies® Diced Red Onion
- 1 cup red bell pepper, chopped
- 1 cup celery, chopped
- 8 ounces WP Rawl Farms® Kale (approx. half of bag)
- 1 tablespoon Dijon mustard
- 2 tablespoons brown rice vinegar
Core and chop apples. Pour orange juice over apples and stir often while combining salad. Drain chick peas. Combine chick peas with onion, bell pepper, celery and kale. Drain apple and stir into chick pea mixture. Combine mustard and vinegar. Pour over kale mixture and toss to coat.
