  • 16 ounces Nature’s Greens Kale
  • 3 medium pears, chopped
  • 3 cups cherry tomatoes
  • 1/4 teaspoon salt
  • 1/3 cup red wine vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 cups sunflower seeds
  • 1 cup chickpeas, crumbled
  • Coarse ground black pepper to taste

Wash and chop kale. Mix chopped kale with fresh pears and tomatoes. Chill until ready to serve. In the meantime, combine canned pears, salt, and vinegar in a blender; cover and process until smooth. While processing, add olive oil in a steady stream. When ready to serve, pour dressing over kale mixture, tossing to combine. Stir in sunflower seeds and chick peas just before serving. Season with coarsely ground black pepper.
