  • 4 slices turkey bacon
  • 5 cups fresh corn kernels
  • 4 ounces Versatile Veggies® Diced Bell Peppers
  • 4 ounces Versatile Veggies® Diced Yellow Onions
  • 8 ounces Versatile Veggies® Diced Tomatoes
  • Salt and pepper to taste

In a large skillet over medium, cook bacon until crisp. Remove bacon from skillet; leaving drippings. Crumble bacon and set aside. Add corn kernels, bell peppers, and yellow onions to skillet and sauté in drippings for 2-3 minutes. Add tomatoes, salt, pepper and continue to cook over low for 1/2 hour, stirring occasionally. Remove from heat and serve with crumbled bacon sprinkled on top.
